Bored of rhubarb crumble then why not try this really simple recipe to make some delicious rhubarb vodka!
You will need:
- 400gms Fresh Rhubarb
- 250gms Sugar
- 75cl Vodka (cheap as possible)
- Kilner jar
- Cinnamon Stick
- 1″ Root Ginger or chunk of stem ginger
Wash and cut the rhubarb into chunks and then place into the kilner with all the other ingredients, I have used cinnamon and stem ginger as I have both in the cupboard but you could just use one of these or you could use some lemon or orange rind, cardamon pods or even cloves.
Once the ingredients are all in the kilner jar, close the lid and give the jar a good shake, then pop into a cool place and leave to infuse for approx 4 weeks remembering to shake the jar every now and then to dissolve the sugar.
When the 4 weeks have passed, strain the rhubarb and other ingredients through a muslin cloth/sieve and decant into clean, dry bottles and enjoy at your leisure as a shot over ice or in a long drink mixed with a little lemonade or for a real treat mix with Cava or Prosecco!
